Cranberry Curd

I have been wanting to make this velvety cold loveliness since thanksgiving, and I finally got my chance this weekend. I wish I could say I thought of this recipe pn my own, cause I am a genius… but it’s from our favorite goddess of kitchenry, Nigella.  

 It also couldn’t be easier to make. You just chuck some cranberries into a pan with some water and sugar. Boil till they all pop and cook down a little.

 

 

Push them through a sieve to get all the skins and most of the seeds out.

 Look at that magenta gorgeousness!

 Chuck it into your double boiler with some sugar, butter and eggs and whisk it until it becomes thick and fabulous.

 Put it into another container right away so it doesn’t over cook.

 Put it into little jam jars for gift giving.

 Sooooo good!

 You can put it on scones, in tarts, on ice cream or eat it right out of the jar with a spoon like I do! YUM!
